Sodium acetate, also called sodium acetate, is a sodium salt derived from acetic acid. Sodium acetate is a substance that is easily made with vinegar and baking soda. When the mixture cools below the melting point, it will crystallize. Sodium Acetate occurs as colorless, transparent crystals or as a granular, crystalline or white powder. The anhydrous form is hygroscopic; the rehydrate effloresces in warm, dry air. One gram of the anhydrous form dissolves in about 2mL of water;1 g of the rehydrate dissolves in about 0.8mL of water and in about 19mL of alcohol.
In the food industry, sodium acetate is used as a preservative, acid regulator and pickling agent. Because salt helps food maintains a certain pH level, it prevents the growth of harmful bacteria. In the pickling process, this chemical must be used in large quantities, not only as a buffer for food and microorganisms, but also to improve the taste of food.

Application
Sodium acetate uses
1.Determination of lead, zinc, aluminum, iron, cobalt, antimony, nickel and tin. Complex stabilizer. Auxiliary agent, buffer, desiccant and mordant for acetylation.
2.It is used for the determination of lead, zinc, aluminum, iron, cobalt, antimony, nickel and tin. It is used as esterification agent for organic synthesis, photography medicine, medicine, printing and dyeing mordant, buffer, chemical reagent, meat anti-corrosion, pigment, tanning and many other aspects.
3.Used as buffer, flavoring agent, flavoring agent and pH regulator. As a buffer of flavoring agent, it can alleviate bad smell, prevent discoloration and improve flavor by 0.1% - 0.3%. It has certain anti mildew effect, such as using 0.1% - 0.3% in minced fish products and bread. It can also be used as sour agent for sauce, pickled cabbage, mayonnaise, fish cake, sausage, bread, sticky cake, etc. It is mixed with methylcellulose and phosphate to improve the preservation of sausage, bread and sticky cake.
4.It is used as anti-coking agent for sulfur regulated neoprene coking, and the dosage is generally 0.5 parts by mass. It can also be used as a crosslinking agent for animal glue.
